Как приготовить венгерский гуляш с пастой?

Я уже писала, что для меня маст-хев сувениров из Венгрии, это сухая паприка, паста для гуляша и мыло с паприкой. Если вы привезли пасту для гуляша или ее привезли вам в качестве сувенира, то вот как приготовить гуляш такой же, как в лучших ресторанах Будапешта.

Рецепт гуляша по-венгерски с пастой

Гуляш является супом простых людей, и это выражается в простоте ингредиентов (мясо, корнеплоды), простоте нарезки (в гуляш все режут крупными кубиками) и простоте приготовления (не надо морочиться так же, как с борщом или том-ямом, например). Еда простых людей всегда готовится просто.

Ингредиенты (на 3л кастрюлю):

  • 500 грамм свинины с жирком
  • 4 средние картофелины
  • 1 целая морковь
  • 1 луковица
  • 2 чайные ложки паприки
  • 1 чайная ложка молотого тмина
  • 2 чайные ложки острой паприки
  • 1 сушеный жгучий перчик
  • Масло
  • Сушеная зелень петрушки
  • Соль по вкусу

Готовим ингредиенты

Овощи нужно почистить и тщательно помыть, мясо обтереть бумажными полотенцами. Лично я картофель замачиваю в воде, в том числе и резаный, чтобы вышел крахмал, так как он в супе мне не нравится.

Нарезаем все кубиками

Как я уже писала, гуляш — суп пастухов, и изысканной шинковской они не увлекались. Лук нужно нарезать не мелко, чтобы он чувствовался, морковь тоже кубиками, и на терке ее ни в коем случае нельзя тереть, получится совсем не то. Свинину лучше взять с жирком, чтобы было понаваристее, ее тоже стоит нарезать кубиками.

Делаем основу

Наливаем масло в кастрюлю, но не очень много, так как свинина даст жирок. Я использую оливковое, но кому-то не нравится его запах. Можно заменить любым маслом.

Масло должно покрыть дно кастрюли.

Добавляем лук, слегка обжариваем его, добавляем тмин (я заменила молотой зирой) и оба вида паприки.

Лук должен не успеть подгореть и стать черным.

Тщательно перемешиваем, не даем луку пригореть.

Лук должен насытиться приправами.

Добавляем свинину, снова тщательно перемешиваем и обжариваем ее 5 минут без добавления воды.

Свинину лучше немного обжарить, прежде чем заливать водой.

Через пять минут выдавливаем половину тюбика пасты для гуляша.

Пасту добавлять до воды.

Добавляем немного воды, перемешиваем и тушим 10 минут под крышкой.

Вода не должны полностью покрывать свинину.

Через 10 минут добавляем перчик, нарезанную морковь и картошку.

Овощи должны занять примерно половину кастрюли.

На этом этапе лучше посолить.

Заливаем горячей водой, солим.

Вода должна покрывать все овощи.

Снова хорошо перемешиваем, добавляем петрушку, убавляем огонь и тушим под крышкой час-полтора.

Томить надо на медленном огне и лучше дать части картошки развариться.

Результат

Через полтора часа можно подавать на стол. Если я не еду в Венгрию, то Венгрия сама приедет ко мне.
